In fact, the vibe is distinctively different before and after sunset, and it’s recommended to arrive before the sun bids adieu to enjoy both. Red Sky features a contemporary open-air terrace framed by a striking arch with rotating colours as the dramatic focal point. The vibe is chic with a touch of exclusivity, yet relaxed, and the soft ambient lighting makes it perfect for a romantic dinner or a sophisticated gathering. A live band adds to the ambience as guests sip on drinks or enjoy their meal. The menu is a celebration of modern European cuisine. Chef Luca Russo’s extensive experience in some of the world’s most prestigious establishments shows through his dishes with their impeccable attention to detail both in flavours and presentation. We kicked off our meal with pan-seared Hokkaido Scallops with spicy lemon butter sauce, Iberic ham (THB 1,150); followed by Yellowfin Tuna Tartare with pistachio coulis, Oscietra caviar (THB 1,650); and then Wagyu Beef Tartare with grilled marrow, summer truffle, Dijon mustard (THB 790). We tasted the freshness of the produce married with perfect accompaniments. Its earthy tones, clean lines and understated elegance create an upscale yet relaxed atmosphere that can be sensed since the entrance walkway with its hand- painted walls. The classy foyer is a tribute to the history of Chatterbox and as we were escorted to our table, we noted how large windows flood the space with natural light, complimenting the warm hues of the interior. Whether seated at a private booth or a communal table, or at the open bar witnessing the skilful bartenders in action, guests will feel they are in an inviting place. The menu at Chatterbox is a celebration of Singapore’s rich hawker heritage reinterpreted with finesse, and we were excited to kick off our meal by sharing a number of dishes. First to arrive was Mackerel & Crab Otah-Otah, the spicy fish cake wrapped in banana leaf and grilled over an open charcoal flame. Its spices including lemongrass, shallots and coconut milk tickled our palates pleasurably, making us certain we had made the right choice to start with. It was followed by a crispy, rich Hotplate Oyster Omelette and a deeply savoury BBQ Sambal Seafood Platter of squid, Lala clams and king prawns. We could not wait for our plate of Grilled Satay to arrive (we ordered chicken; there is a beef option) and soon we were swooning over the perfect union of charred meat smothered in sweet-savoury peanut sauce. My favourite dish was the Steamed Scallops with Vermicelli and Assam Sauce with its delicate flavours of scallops, lemongrass and ginger flower. Next was the highlight of the meal – Mandarin Chicken Rice, the legendary dish that has garnered a cult-like following. I was informed that Chatterbox uses only free- range chickens that are specially reared for 60 days (an additional 15 days than usual) to ensure the meat is plumper, juicer and more flavourful. It is lovingly cooked in an aromatic stock, steamed slowly till tender and then cooled to seal in the symphony of flavours. The Mandarin Chicken Rice is really live ups to its fame – after my first bite, I can assure you that I am not going to eat chicken rice elsewhere! The beverage menu ranges from artisanal teas to curated wines, covering all occasions. Service at Chatterbox was impeccable with staff exuding warmth and professionalism. They offer thoughtful recommendations and ensure diners are attended to promptly. Dishes are served with attention to presentation and plates are cleared efficiently. Despite the upscale setting, the experience we had was genuine and unpretentious. The abalone was delicately paired with Barley, Dried Shrimp, Shallots, and Ginger Sauce. This dish also told the story of the resilience and heritage of the Haenyo divers—often women over 50—who brave the cold ocean depths without any breathing equipment to harvest these treasures. Learning this story added an extra layer of admiration and appreciation for every spoonful. Chef Danny then presented Sturgeon Meunière with a velvety Nha Trang Lobster Bisque, Transmontanus Caviar, and a vibrant Fennel Orange Slaw. The lobster bisque brought luxurious richness while the citrus oil added a bright, refreshing note, making this dish both indulgent and balanced. The night began with Shrimp Mulhoe, a refreshing dish from Jeju featuring Tomato Consommé, Tomato Snow, and Compressed Cherry Tomato. Each spoonful burst with freshness and tang, offering a vibrant start that awakened the palate. Next to arrive was Japanese Wagyu A5 Tartare, elegantly crowned with Oscietra Caviar, Egg Yolk Gel, and Truffle Potato Chips. The creamy richness of the tartare contrasted beautifully with the crisp texture of the chips, creating a well- rounded bite. depth of Port Wine Jus showcasing Chef Kim’s precision with flavours and with execution. To reset our palates, a Physalis Granita infused with Starfruit Jam and Ginger Candy was served. It was a delicate and refreshing interlude before the next bold creation: The Flying Hog with Korean Ssam Leaf and House- Made Soybean Paste. This signature dish from Jeju Island featured pork paired with aged kimchi salsa and fresh Ssam leaves. Chef Jayden’s expertise in grilling shone brilliantly in this dish, as the pork carried the distinct aroma of wood-fired smoke while remaining succulent and flavourful. The aged kimchi, marinated for over a year, added an incredible depth of flavour to every bite. Eating it the traditional Korean way by wrapping all the elements together created a heavenly bite of textures and flavours. The evening concluded with Chef Danny’s stunning Crémeux au Chocolat et Poire, created of Valrhona Manjari 64% Dark Chocolate, Wine-Poached Pear, Cocoa Cake, Blood Orange Gel, and Coconut Crumble. Each spoonful was a decadent celebration reminiscent of Christmas, balancing the deep chocolate note with a zesty citrus accent and delightful crunch from the crumble. Chef Danny's artistry shone through this unforgettable dessert. Just when we thought the magic of the evening had reached its peak, both chefs presented a delicate jewellery box that was opened to reveal a Pink Pearl made entirely of chocolate for our table. This final touch was not only delightful but symbolic—a sweet gem that encapsulated the venue itself and the entire experience. This collaboration by Chef Jayden and Chef Danny was a truly harmonious masterpiece, a symphony of flavours and craftsmanship capturing the essence of each chef's culinary heritage with every dish filling us with excitement and keeping us eager for the next.
