THANN WELLNESS DESTINATION: RIVERBANK SANCTUARY FOR WELL- BEING6264 CENTO 66 INDDEE 68 THE KITCHEN TABLE, W BANGKOK 6364 COME DINE WITH ME THE FEAST65 Cento transcends the conventional Italian eatery. According to founder Manuel Palacio, it embodies the essence of a hospitality house with Italian flair and this ethos resonates throughout the establishment, fostering an environment that exudes warmth, where simplicity reigns supreme and genuine hospitality is paramount. The ever-evolving menu also reflects this commitment, adapting to market trends and seasonal ingredients, ensuring each visit unveils a fresh dining experience. Picture stepping into the home of your dearest friend and being greeted warmly as they craft a meal from the heart with whatever ingredients their fridge holds. As you enter Cento, you're greeted by an inviting bar behind which friendly bartenders wait to serve a perfect drink, and set the tone for what lies ahead. Two distinct dining rooms beckon, each boasting unique décor, as well as a private room for those seeking a more intimate space for 8-10 guests. Before dinner, I like to invigorate my palate with a refreshing cocktail and, as a fan of flavours that lean towards the sour spectrum with a hint of sweetness, the bartender suggested a Clover Club (THB380) – a concoction of Beefeater gin, raspberry, lemon, sugar and egg white, garnished with a candied cherry. I found myself so enamoured by its smooth, revitalising taste that I indulged in two glasses! Embracing the menu's ethos of shared dishes, we selected three appetisers to commence with. Our first choice was smoked Hamachi Crudo (THB 550). The fish was remarkably fresh with a delightful firm texture, enhanced by marination in lemon, yuzu, soy and extra virgin oil. It was followed by Beef Carpaccio (THB 680), paper-thin slices of raw tenderloin adorned with capers, shallots and Parmigiano, rendering it effortlessly enjoyable. Our final appetiser was Clams (THB 490), which had been simmered in a tantalising sauce of white wine, garlic, parsley, nduja and chilli, and was served alongside house-made sourdough bread. The highlight was undoubtedly the pleasure of dipping pieces of fresh bread into the tasty sauce before eating them! Before our main courses took centre stage, we were invited to visit Cento's wine cellar. Guided by a knowledgeable sommelier, we became acquainted with the meticulously curated selection of 100 wines which represents Italy's diverse regions. Picture rows and rows of wine bottles neatly organised by four price points, starting from THB 2,500 and extending to exclusive vintages. It was a wine- lover's paradise and of course, a more engaging way to select a perfect wine for our main course than by perusing a wine list. Indulging in pasta is de rigueur at Cento. Each pasta is meticulously prepared fresh to order from the finest flour, boasts the ideal thickness and texture, and is cooked to al dente perfection. As avid seafood enthusiasts our choices leaned towards Tuscan-inspired delights, and we began with fresh tantalising hand-rolled Pici reminiscent of thick spaghetti, with a generous serving of succulent crab in a lemon-butter sauce (THB 650). Next to grace our table was the Agnolotti with Grilled River Prawn (THB 890), served with clams and chilli simmered to perfection in a delectable seafood stock. The agnolotti, a delightful pasta stuffed with beef, was crowned with a perfectly grilled river prawn whose tomalley burst with juiciness. Every bite was a testament to the freshness and quality of the ingredients. What struck us most was the considerate incorporation of spices and chilli in many of the dishes, which balanced flavours more finely as well as minimised any feeling of heaviness – a refreshing adjustment of the typical Italian dining experience elsewhere. Continuing our Italian journey, we ventured into the grill offerings of Cento – and found it difficult to choose between the two signature dishes; a whole Charcoal-Grilled Lobster with Risotto, or an iconic Bistecca alla Fiorentina (1 kg). We finally opted for the former (THB 2,380) and were treated to a grand reveal as a giant red pot arrived at our table. Our excitement was palpable as its lid was lifted to reveal a sight to behold – a whole grilled lobster sitting on top of creamy risotto. Each bite was taken with reverence, and with each one we felt as if we were approaching culinary bliss. Text by Chondarin Subarna Na Ayudhya Nestled in Bangkok's bustling Silom district, Cento is the city's freshest addition to the culinary scene, promising patrons a distinctive fusion of Italian hospitality and bold, no-frills cuisine, all set against a backdrop of vibrant energy. Cento Bangkok IG. @centobangkok L. @centobangkok W. https://centobangkok.com Next on our agenda was the Flank Steak (250g at THB 1,080), featuring Wagyu M6 cooked rare, accompanied by two sides – burnt carrots, naturally sweet and tender from the grill, and crushed potatoes seasoned with butter, rosemary and garlic. The classic and comforting combination of steak and vegetables, prepared to perfection, left us grinning from ear to ear. To conclude our Italian dinner, we indulged in two delightful desserts. First up, the luxuriously smooth and rich 70% Chocolate Mousse with Vanilla Gelato (THB 380). Following suit was a zesty Lemon Pie (THB 350) adorned with a generous heap of meringue, its tart citrusy flavour serving as a refreshing conclusion to our excellent meal. In summary, Cento is an Italian gem of an eatery and certainly warrants a visit. I’m already planning to return with friends to try other enticing offerings on its excellent menu. I also applaud the staff, who effortlessly anticipated our needs before we even had to ask – a testament to their commitment to Cento becoming a hospitality house where guests return to time and time again. Whether you are wanting a quick drink, light bite or first-rate Italian meal in the Silom neighbourhood, Cento deserves to be one of your top choices.66 COME DINE WITH ME THE FEAST67 In less than a year, Inddee ascended to culinary stardom by earning a coveted MICHELIN Star for 2024. Adding to the accolade, head sommelier Thanakorn Bottorff also earned the well-deserved MICHELIN Sommelier Award for 2024. Hence, diners should indulge themselves with an alcohol beverage pairing, which is priced at THB 3,900++ for nine glasses and stands out in my memory as one of the finest I've enjoyed. For those who may find the extensive pairing a bit too much, there's the flexibility to opt for wine by the bottle, of course – Inddee boasts an impressive selection of over 600 labels to ensure a perfect match for every palate. Alternatively, diners may select wine by the glass from an extensive list of over 60 wines. Head Chef Sachin Poojary and his team have lovingly crafted a seven-course tasting menu (THB 3,200++) that pays homage to Indian traditions but with modern flair. The meal commences with 4 Bites into Inddee, a prelude that introduces the fundamental concepts of Indian spices with tantalising chat- pata (street food). Each bite is marked by a specific location and narrates an authentic story of its city of origin. The culinary expedition really starts at Kashmir, the northernmost region of India, with MOREL. This exquisite dish features grilled morel mushrooms harvested in the Himalayan foothills during the thaw of spring, topped with an almond foam reminiscent of snow-capped peaks and elegantly presented on a bed of Kashmiri Saffron Pulao. I was captivated by the distinct aroma, nutty flavour and meaty texture of the mushrooms, comprehending why the morel is also called the “queen of mushrooms”. The culinary journey continues with SCALLOP, which delves into South India. Inspired by the Onam festival in Kerala marking the end of the monsoon and rice harvest, Chef Sachin transforms the traditional Sadhya meal into bite-sized perfection. Using Hokkaido scallops cured in the Japanese tradition to infuse the dish with umami flavour, this creation serves as a delightful tribute to the festival with pinches of five spices, and left my palate thoroughly impressed. The meal transitions to Kolkata with COD, allowing diners to indulge in the succulence of Alaskan black cod marinated in two unique Indian ingredients: aromatic, fermented Gondhoraj lemon skin and flavourful fermented mustard pickle. Charcoal-oven- cooked to perfection, the dish offers refreshing notes at the midway point of the tasting menu. With seating for 50 guests spread across two floors, the restaurant underscores its commitment to presenting the diverse and rich spectrum of heritage Indian flavours with three live kitchens. MASTERFULLY MODERNISED INDIAN TRADITIONS Venturing deep into the central region of Nagpur, QUAIL delights in Saoji cuisine which is renowned for some of the spiciest dishes of the nation. The charcoal-grilled French quail, glazed with Saoji masala, offers a burst of flavours also with its quail jus featuring orange and madeira. A parsnip purée counterbalances the heat of this dish. A delight for the palate, the dish can be enhanced with a supplementary kulcha, or truffle and brie-stuffed Punjabi bread cooked in the tandoor. CHICKEN (Khurchan) travels into the kitchens of ancient Indian palaces. The hand- pulled chicken-jackfruit khurchan is harmoniously balanced with Nashi pear and fenugreek crème fraîche. The distinguished, rich curry offers a unique twist with the delightful pairing with pear. The sweet finale is near with ROSE, a journey to the vibrant streets of Mumbai. The baked yogurt falooda delicately entwines vermicelli with luscious milk, and enriches it with the sweet fragrance and taste of Chiang Mai rose syrup to offer a sensory symphony as well as nostalgia. The Indian epicurean adventure reaches its grand finale with CHOCOLATE. Aficionados of the cocoa bean will reach gastronomic ecstasy with the rich, velvety concoction featuring a 64% chocolate from the Cardamom Hills of Idukki, coffee from Chikmagalur and a luxurious vanilla ice cream also from Idukki, topped with a delicate pinch of Tuticorin sea salt. The classic flavour combination of chocolate, coffee and vanilla leaves a lingering sense of indulgence and an irresistible desire for more – the perfect note to end a tasting menu with. After savouring this tasting menu, Inddee's meteoric rise to Michelin stardom is indeed well-deserved – its dishes are curated intelligently and executed meticulously, while remaining true to the rich tapestry of Indian flavours. Inddee is not just a restaurant; it's a sensory odyssey that seamlessly melds tradition with modernity. Even those normally hesitant about Indian cuisine should come here, to explore and better understand the diverse culinary landscape of India’s regions. Inddee is thus highly recommended, for an unforgettable culinary journey that promises no regrets.68 with soy sauce-marinated tofu, shredded carrot, Japanese cucumber, red cabbage, cherry tomato, avocado, nori seaweed, sesame seeds and spring onion, all covered with a light dressing. The Japanese Hamburg Steak was juicy, smothered in mushroom gravy and was accompanied with creamy mashed potatoes. One of the most popular fusion dishes here is Ebiko & Miso Cream Pasta, featuring angel hair pasta in a creamy miso sauce that is adorned with Japanese Ebiko, nori seaweed and shiso leaf.
